Sugar Cookie Fruit Tarts with a Cheesecake Filling

Sugar Cookie Fruit Tarts with a cheesecake filling. These little tarts are so delicious and so easy to make at home, no special pans needed.


Ingredients:

FOR THE SUGAR COOKIE DOUGH:

  • 2 sticks 8 ounces of unsalted butter, softened
  • 1 1/2 cups of granulated sugar
  • 2 eggs
  • 2 tsp of vanilla extract
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 4 cups All-Purpose Flour

FOR THE NO BAKE CHEESECAKE FILLING:

  • 8 oz cream cheese
  • ½ cup sugar
  • 1 tsp vanilla
  • 1 cup heavy cream or 4oz cool whip
  • FRESH BERRIES FOR SERVING and sliced fruit…your choice.

Instructions:

FOR THE SUGAR COOKIE CUPS:

  1. Preheat the oven to 375 degrees.
  2. Place butter in a bowl and beat until smooth.
  3. Add the sugar and mix until combined.
