Easy chicken taco stuffed peppers are full of veggies and protein. Taco seasoned chicken stuffed in bell peppers, topped with cheese, baked, then topped with traditional taco toppings.
Ingredients:
- 2 large bell peppers any color
- 1 tbsp. olive oil
- 1 pound boneless skinless chicken breast, chopped into small bite size pieces
- 4 tbsp. taco seasoning
- ¼ - ½ cup water
- 1/2 cup shredded cheddar cheese
- Optional toppings: taco sauce diced tomatoes, sliced green onions
Instructions:
- Preheat oven to 400 degrees F.
- Cut the peppers in half, through the stem, and remove the seeds. Place them cut side up on a baking sheet. Roast for 20 minutes.
